  • 60 g Wheat flour
  • 60 g Potato starch
  • 1 Tsp. Baking powder

  • 600 ml Whipped cream
  • 100 ml Milk

  • 1,5 Tbsp Breadcrumbs
  • 60 g Wheat flour
  • 60 g Potato starch
  • 1 Tsp. Baking powder
  • 4 Eggs (size M)

  • Springform tin (approx. 24 cm diameter)
  • Flour sifter

First preheat the oven to 175°C. Grease the springform tin with butter. Then pour the breadcrumbs into the tin and toss so that the crumbs stick to the butter. This will make it easier to remove the base from the tin later.

Mix the wheat flour, potato starch and baking powder. In another bowl, beat the eggs and sugar until frothy and then sieve in the flour mixture. Pour the finished batter into the springform tin and bake on the middle shelf for approx. 35 minutes.

  • 100 ml Milk
  • 2 Tsp. Icing sugar
  • 2 Tbsp. Cornflour or starch
  • 2 Tsp. Vanilla sugar

Prepare the vanilla cream in the meantime: place the whipping cream, milk, icing sugar and cornflour/starch in a pan. Simmer, stirring constantly, until the cream thickens. Remove from the heat and add the vanilla sugar (or ground bourbon vanilla). Leave to cool.

  • 500 g Fresh strawberries
  • Strawberry jam

Leave the cake base to cool. Then carefully remove from the springform tin and cut into 2 slices with a long knife (3 slices if thick enough). Place on a cake plate with the baked side facing down. Wash the strawberries, cut them into pieces and mix with the cooled vanilla cream.

Then it’s time to layer: First spread a little strawberry jam on the bottom cake layer, then the vanilla cream with the strawberries on top. Place the second cake base on top.

To garnish the cake, whip the whipped cream until stiff. Spread all over the cake. If you prefer, you can also use a piping nozzle to pipe the cream decoratively onto the cake. Finally, garnish with the remaining strawberries. Place the cake in the fridge for at least 30 minutes before serving.

Tipp: Decoration and garnishing

A strawberry cake is often decorated in a cheerful way and baked for summer celebrations in Sweden. In addition to cream and strawberries, fresh mint leaves, white chocolate shavings or even edible flowers are added to the Midsommar cake. Nevertheless, it always looks quite natural and a little “messy”.

The Swedish Midsommar Cake

In Sweden, strawberries in any form are served at Midsommar.

Jordgubbstårta (“strawberry cake”) is the classic dish for Swedish Midsommar or Midsommardagen. The festival in June usually takes place outside with family and friends. A kind of maypole is erected, people sing, dance, play and, of course, eat delicious food. Strawberries are usually served in different variations as a dessert – including the delicious strawberry tart.

If you fancy a little strawberry cake in between and don’t have time to bake, there are frozen strawberyr cakes with vanilla to be found in the supermarket, which come pretty close to the Swedish original. But of course it tastes best when you bake it yourself with fresh strawberries.

Suitable for the Midsommar coffee table

Although the strawberry cake is the highlight of the Swedish Midsommar table, the table is decorated in Scandinavian country house style to match. The cake looks particularly good on a beautiful cake platter under a dome – also practical for protecting it from insects outside.
