Swedish summer soup with salmon: light and healthy

  • 150 ml Cream
  • 1,5 l Vegetable stock
  • 3 Tbsp. Chopped dill

First wash, peel and dice the potatoes. Then wash the leek and cut into rings. Melt the butter in a pan and add the potato and salmon pieces. After frying briefly, deglaze with the vegetable stock and simmer for 15 minutes.

Now cut the salmon into pieces. Before adding the salmon cubes, use a hand blender to puree the potato and leek pieces to taste. After adding the salmon cubes, cook for a further 5 minutes. Then add the cream and dill and garnish with cucumber slices and dill as desired.

Why Swedish summer soup is so healthy

As well as being quick and easy to prepare, Swedish summer soup can also be wonderfully pre-cooked. But this delicious dish has even more to offer: The soup is extremely healthy!

This is because the potatoes provide carbohydrates, while the salmon not only contains healthy omega-3 fatty acids, but is also high in vitamin B6, vitamin B12 and niacin (vitamin B3). Additionally, the leek contains valuable ingredients that make the soup so recommendable. The iron it contains is particularly important, as well as the potassium and vitamin C, provided by the vegetable.

Other variations of the Swedish summer soup

The Swedish summer soup can easily be modified: instead of salmon filets, you can use smoked salmon, for example. However, you should bear in mind that it is already salted, which will of course affect the flavour. Let your imagination run wild when it comes to seasoning!
