Swedish apple cake: country happiness to bake

Sweet and sour apples meet vanilla, cream and a little chocolate: this Swedish-style tart is not only quick and easy to prepare, but tastes everyone. The perfect recipe for the spontaneous coffee table and for a little rural Swedish feeling in your home.

  • 0,5 Tsp. Baking powder
  • 1 kg Apples
  • 1 Lemon
  • 300 ml Water

  • 1 Sachet Vanilla custard powder

  • 2 Sachets Cream stiffener
  • 50 g Dark chocolate shavings or cocoa powder

  • 1 Sachet Vanilla sugar
  • 70 g Wheat flour
  • 0,5 Tsp. Baking powder

  • Springform tin (26cm diameter)

Firstly, preheat the oven to 180°C top/bottom heat or 160°C fan. Line a springform tin (approx. 26 cm in diameter) with a piece of baking paper and grease it.

For the sponge base of the cake, beat the eggs with the sugar and vanilla sugar until frothy. Then mix the flour and baking powder and add to the egg and sugar mixture. Mix with a hand mixer or food processor. Pour the finished batter into the springform tin and bake for approx. 20 minutes. Leave to cool in the tin so that the apple and cream can be layered on top later (alternatively, a cake ring is also suitable).

  • 300 ml Water
  • 150 g Sugar
  • 1 Pint Cinnamon
  • 1 Sachet Vanilla custard powder

Then peel and core the apples. Grate them or cut them into small pieces (not too big, otherwise they won’t soften). Place the juice of a squeezed lemon in a pan with the water, sugar, cinnamon and vanilla custard powder and bring to the boil briefly while stirring. Simmer over a medium heat for 1 to 2 minutes while stirring and then leave to cool briefly. Then slowly fold in the chopped apples.

Spread the apple mixture over the cake base and leave to cool completely.

  • 2 Sachets Cream stiffener
  • 50 g Dark chocolate shavings or cocoa powder

Now place the whipped cream and cream stiffener in a bowl and whip until stiff. Pour the cream onto the cake and spread evenly over the apple mixture. Optionally, sprinkle with chocolate shavings or cocoa powder. Cool the finished apple tart in the fridge for at least 30 minutes before serving.

Tipp: Choose your cake decoration!

The cake is traditionally decorated with chocolate shavings, but cocoa powder or cinnamon are also very popular. If you like, you can add egg nog on top or decorate the pieces of cake with cherries.

Classic version with apple and vanilla pudding

The Swedes know how to bring nature right to the table. Delicious apples taste great cooked at any time of year, no matter how freshly they have been harvested. Mixed with the vanilla pudding, they unfold their fruity sweetness perfectly. If you like it a little more sour, choose the appropriate apple variety.

The covered apple cake is suitable for any occasion and also if you need to make something quickly. You can either use a ready-made sponge base from the supermarket, which only needs to be topped with apple and cream – or you can choose a suitable baking mix.

Variants according to your mood

The Swedish apple cake is usually decorated with chocolate chips or cocoa powder. Cinnamon is particularly tasty at Christmas time. It can be added directly to the apple filling together with spices such as aniseed or cloves – it tastes like roast apple!

During Easter and spring, eggnog tastes great on the cake. If you like it colourful and fruity, you can use cherries as decoration.
