Danish remoulade: simple and quick

Danish-style remoulade is characterised by its sweet and sour taste as well as its fresh yellow colour – a delicious topping for savoury dishes. The original from Denmark is not only available to buy in the supermarket, but can also be prepared quickly and easily yourself with the right mix. And this is how it works:

  • 1 Small jar Mixed pickles
  • 1 Tbsp. Capers
  • 2 Tbsp. Mayonnaise
  • 2 Tbsp. Sour cream
  • 2 Tsp. Mustard
  • 1 Tsp. Lemon juice
  • 0.5 Tsp. Curry
  • Salt

Remove the cucumbers, cauliflower, onions and carrots from the jar of mixed pickles and drain briefly. Dice approx. 60 g of those into fine pieces. Optionally, roughly chop capers.

  • 2 Tbsp. Sour cream
  • 2 Tsp. Mustard
  • 1 Tsp. Lemon juice
  • 0.5 Tsp. Curry

Mix the mayonnaise (bought or homemade) with the sour cream in a bowl. Then add the mustard, lemon juice, curry and the chopped vegetables from the mixed pickles (and optionally the chopped capers). Leave the mixture to infuse for approx. 10 minutes.

Flavour the remoulade with salt, pepper and a little sugar. If you would like more flavour, add a little of the pickle stock if necessary.

If you like, you can garnish the finished remoulade with a few herbs. You can also add a little turmeric for an even stronger yellow colour. The remoulade is particularly delicious with Danish hot dogs, burgers, breaded fish or meatballs and schnitzels.

Buying Danish remoulade

Even though the recipe is super simple and the preparation is quick, you can of course save yourself some effort and simply buy the original Danish remoulade. However, what makes the homemade version so delicious are the crunchy pieces of vegetables from the jar and the fresh mix of sweet and sour ingredients.

The Danes prefer to use a jar of “mixed pickles” for their remoulade, i.e. cucumbers and other pickled vegetables in a jar, which is also available in supermarkets.

Incidentally, homemade Danish remoulade is best stored in a preserving jar or screw-top jar.

Topping for Smörrebröd, hot dogs & co.

The original Danish remoulade is of course a favourite accompaniment to classic Danish dishes . The typical Danish hot dog with its bright red Rød pølse sausages would be unimaginable without the right remoulade. The popular Smörrebröd is often garnished with remoulade as well.

Some Danes also use fresh vegetables for their sauce. The traditional family recipes vary somewhat, but what they all have in common is the typical curry-yellow colour, which distinguishes them from classic remoulade.

If you like it a little more savoury, serve it with fried fish, schnitzel or meatballs – of course you can also dip chips in it.
